Cinnamon Vanilla Chickpea Blondies
These Cinnamon Vanilla Chickpea Blondies are the perfect healthy treat without flour or refined sugars. If you love cinnamon, these Blondies are perfect for you and your family.

INGREDIENTS:
1 15oz can chickpeas, rinsed & drained
1/4 Cup Gourmet Granola Cinnamon Vanilla granola
1/2 Cup Cashew Butter
2/3 Cup Coconut Sugar
1/4 Cup Maple Syrup
1 1/2 Tbls Cinnamon
1 tsp Vanilla Extract
1/2 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Salt
 
INSTRUCTIONS:
Preheat oven to 350F degrees. Line & grease an 8x8 pan. Combine all ingredients in a food processor and blend until smooth. Stop occasionally to scrape down the sides. Pour batter into pan and smooth until even. Top with additional granola and more toppings if preferred (Almonds, coconut, or chocolate chips). Bake at 350 F for about 30 minutes. Allow to cool then slice into 9 big bars or 16 mini bars.
