Gingerbread Baked Oatmeal
This Gingerbread Baked Oatmeal is the perfect breakfast while sipping hot cocoa and enjoying the warm fire inside.
The added vanilla yogurt in the middle is the perfect filling to dip the outer sides in. It's just like a cream cheese filling but better!
Gingerbread Baked Oatmeal with "cream cheese" filling
Ingredients:
  • 1/2 C Gingerbread Granola
  • 2/3 C Milk of choice - I used Vanilla Almond Milk
  • 2 Tbls Maple syrup
  • 1 Tbls Chia seeds
  • 1 Tsp Baking powder
  • 1 scoop Vanilla protein powder
  • Pinch of sea salt
  • 1/4 C Vanilla yogurt
  • Optional Icing: 4 Tbls Powdered Sugar + splash of milk
  • Top with icing and holiday sprinkles.
Directions:
Preheat oven to 400 degrees F. Spray oven-safe bowl/dish with non-stick spray. Combine all ingredients except toppings in a blender and blend on high for about a minute, until smooth texture. Pour into oven-safe bowl/dish. Add the vanilla yogurt in the middle (it becomes like a cream filling) Bake for 25 minutes. Allow to cool slightly. Then top with icing and sprinkles, then dig in.
