Banana bread is so 2019...2020 is the year of Granola bread! It's gluten, dairy, soy free and the best part...NO yeast needed! Just a few simple ingredients with no refined sugars/oils/preservatives. This would be a perfect treat for a neighbor, friend, coworker, or just treat yo' self!

You can also make this bread with our Peanut Butter granola and add in chocolate chips for a sweet dessert bread, or our Lemon Almond granola with a lemon glaze for a mock lemon cake. The possibilities are endless! 

3 cups The Gourmet Granola (I used Cinnamon Vanilla Almond)
3/4 cup unsweetened nutmilk (I used Almond)
1/2 cup honey                                                                     
2 Eggs or Flax/Chia egg               
1/2 tsp salt
3/4 tsp baking soda
1/2 tsp baking powder

Preheat oven to 350F. Grind 3 cups granola until fine - about 2 mins. In a large bowl whisk together honey, eggs, nut milk, and salt. Add baking soda & powder to flour and process for 10 seconds. Add dry mixture to wet ingredients and mix until totally combined. Let mixture sit for 5 mins. Line a bread pan with parchment paper. Add mixture to prepared bread pan. You can add more granola to the top. Bake for 35 mins until inserted toothpick comes out clean. Let cool completely before slicing. Enjoy with a drizzle of honey.
