Mocha Baked Oatmeal
With Fall right around the corner, some mornings you want something toasty warm in the morning. This Mocha Peanut Butter Baked Oatmeal is the perfect comfort breakfast. This easy baked oatmeal is dairy free, soy free, gluten free AND easy!

INGREDIENTS:
 1 1/2 Cup Mocha Granola
1/3 C Cocoa Powder
1 tsp Sea Salt
1/4 C Coconut Sugar
1 C Applesauce
1/2 C Peanut Butter
1/4 C Honey
1 tsp Vanilla Extract
1 egg or vegan chia egg
1/4 C Mini Chocolate Chips (if desired)
 
INSTRUCTIONS:
Preheat oven to 350F. Line a 9x9 baking tin. Mix together granola, cocoa powder, baking powder, salt, & coconut sugar. In a separate bowl combine applesauce, peanut butter, honey, vanilla, & egg. Mix dry into the wet and then pour in the almond milk. Fold in chocolate chips (if desired). Pour into prepared pan & bake for 30-40 mins. You’ll want the edges browned and the top the slightly spring back. Let cool for 10 mins, slice & enjoy! Makes 6 servings.
