Naughty Granola Cookies
I usually post recipes that are healthy for you. This cookie recipe is far from that but they are DEFINITELY worth it! These cookies have a crunchy but chewyness to them. These cookies would be perfect to make for mother's day or you can just treat yo' self (nothing wrong with that!).Glenn made a cookie sandwich with marshmallow fluff in between two and said it was amazing (of course when I wasn't around to get a picture of it). I was going to make lemon cookies with our Lemon Almond granola, but was afraid I would be kicked out to the shop. If you want to make them with Lemon Almond, swap out the vanilla for lemon extract and add a lemon icing...mmmm... If you make this version, PLEASE shareINGREDIENTS:2 1/4 cup The Gourmet Granola (Cinnamon Vanilla Or Lemon Almond)1 cup butter2 1/4 cup brown sugar, packed3 Tbls flour 1 tsp vanilla1 tsp salt1 eggDirections:Preheat oven to 375 degrees. In a small saucepan over medium heat, brown butter until it turns brown in color. Remove from heat. In a mixing bowl or mixer, combine brown sugar, granola, egg and vanilla. Add brown butter. Mix until combined. Stir in salt and flour. Using a tablespoon or cookie scoop, drop and flatten slightly on a parchment lined cookie sheet leaving room to spread. Bake for 8 mins or until golden brown. Makes about 20 cookiesYou can also make these cookies with our Lemon Almond granola with a lemon glaze. Just swap the vanilla extract for lemon extract.
