Oatmeal Cupcakes

Cupcakes for breakfast? Yes, PLEASE!

Next time your toddler asks for cupcakes for breakfast, you can whip up a batch of Oatmeal Cupcakes.  These oatmeal cupcakes are the perfect quick breakfast. We all know getting out the door can be tough and these cupcakes are a great way to start your day! These are a great made ahead treat!  They refrigerate perfectly.

Ingredients:
2 1/2 cup Cinnamon Vanilla, Cinnamon Vanilla Almond or Lemon Almond granola
1 1/4 cup mashed banana
1/2 tsp salt
2 1/2 Tbls maple syrup
1 1/3 cup water
2 Tbls coconut oil
2 tsp vanilla extract
Mix-ins: nuts, dried fruit, chocolate chips

Directions:
Line muffin tines and preheat oven to 380F. Mix together dry ingredients and stir. Mix together wet and pour into the dry ingredients. Add in up to 1/2 cup of mix-ins, if desired. Pour into liners and bake for 21 mins. Let cool in the pan.  Top with yogurt, if desired. Enjoy warm, refrigerated or store in the freezer.
