Peanut Butter Chocolate Chip Cookies
If you like soft and gooey cookies, these are a top contender! These Chocolate Chip cookies are always a popular sweet treat. They are easy to assemble and you can never have enough. You can easily swap out ingredients for what you have on hand. Sometimes it's a great way to use up those last little bits you have laying around in the cupboard. Some popular swaps are white chocolate chips with craisins or add a handful of chopped walnuts or pecans.
Ingredients:1 Cup The Gourmet Granola
Peanut Butter Granola2/3 Cup packed brown sugar *if you swap this out for coconut sugar, let us know how they turn out!
1 1/2 t vanilla extract
2 eggs
1 Cup peanut butter
1 t baking soda
2/3 Cup chocolate chips
Directions:Preheat oven to 350⁰ F. In a mixing bowl add granola and baking soda. In a separate bowl combine the peanut butter, brown sugar, eggs, and vanilla extract. Add the wet ingredients into the mixer and mix until combined. Fold in the chocolate chips by hand and roll them into 2 T size balls. Place on a lined baking sheet and bake for 9-11 minutes. They may look underdone, but they are soft in the middle. Let cook baking sheet and place on a wire rack. Makes 16 cookies.
